Local restaurant group announces collaboration with High West Distillery

Lee's Summit restauranteur Andy Lock and partner, Domhnall Molloy, launch private-label bourbon

Restaurateurs Andy Lock and Domhnall Molloy are collaborating with High West Distillery, a manufacturer of distilled spirits located in Utah, to bring an exclusive, hand-picked single barrel bourbon to the Kansas City metro. The bourbon bottles are privately-labeled with Summit Grill, Third Street Social, Lakewood Local and Summit Cellar & Spirits branding on each bottle. The High West Single Barrel American Prairie Cask Strength Bourbon 750ml bottle is available for full bottle purchase only at Summit Cellar & Spirits beginning on Oct. 20.

To celebrate this hand-picked barrel, the public is invited to a launch party on Friday, Oct. 20, from 4 – 7 p.m. at the following Lock and Molloy owned establishments: Third Street Social, Summit Grill (Waldo and Lee’s Summit), Lakewood Local and Summit Cellar & Spirits. The launch party includes complimentary tastings of the hand-picked barrel as well as swag giveaways from High West Distillery.

Following the launch party, each restaurant will offer single pours, whiskey flights and specialty cocktails incorporating the High West single barrel bourbon on their menus while supplies last. The core four items – Double Rye, American Prairie Bourbon, Rendezvous Rye and Campfire Whiskey – will continue to be available for every day purchase at all locations.

High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to the Maker’s Mark Distillery in Loretto, Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history. High West began with humble roots, opening a small, 250-gallon still and Saloon in an historic livery stable and garage. What was once a small operation in downtown Park City has grown to be an internationally-recognized brand with four unique locations.  In 2015, High West opened their distillery in Wanship, Utah, which acts as a space for educational whiskey tasting, pairings and tours, and houses a 1600-gallon copper pot still. Meanwhile, the Saloon continues to operate as a must-visit gastro-distillery, featuring alpine-inspired western fare alongside the original still, the Nelson Cottage offers unique whiskey-paired dinners, and the Saloon at the Salt Lake City airport allows for some last tastes of High West on the way out of town.
